Crazy Cake in a Mug


 

INGREDIENTS

  • 5 Tablespoons flour (all-purpose)
  • 4 1/2 Tablespoon sugar
  • 2 teaspoons cocoa (unsweetened)
  • 1/4 teaspoon baking soda
  • Dash of salt
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon pure vanilla extract
  • 2 teaspoons vegetable oil (or canola)
  • 4 1/2 Tablespoons water

 

DIRECTIONS

  • Step-by-step photos below.
  1. Using a large microwave safe mug, spray the inside with non-stick cooking spray.
  2. Next, mix the first 5 dry ingredients in the mug.
  3. After mixing well, make 3 depressions in dry ingredients.
  4. Pour vinegar in one depression, vanilla in the other and the vegetable oil in third depression. Pour water over top. Mix well until smooth using a fork.
  5. Place in microwave and cook on high for *2 minutes, uncovered.
  6. Check with toothpick to make sure it comes out clean. Be sure not to overcook!
  7. Top with whatever you like – powdered sugar, frosting, chocolate chips, caramel or whipped cream! Enjoy hot or cold!

TIPS

  • Each microwave cooks differently — adjust time accordingly!  One person made the cake in 1 minute 40 seconds, and another in 1 minute 20 seconds. If you overcook the cake, it may ruin it. Be sure to watch as it bakes. 
  • If you want a neater mug cake, mix the cake batter in a small bowl, then pour the batter in the mug.
  • You can add mini chocolate chips to the batter for a super rich chocolate cake…or do what I did, throw some on top after you make it, while it’s still warm!  Mmm, mmm good!

Spring Quencher: Raspberry-Mango Sangria

Yield: Serves 8

Ingredients

  • 1 mango, peeled, pitted, flesh thinly sliced lengthwise
  • 1 cup raspberries
  • 3 tablespoons raspberry liqueur
  • 1 bottle (750 ml) rose wine
  • 4 cups (32 ounces) chilled lemon-lime soda
  • Ice

Directions

  1. In a pitcher or large bowl, combine mango, raspberries, raspberry liqueur, and rose wine.
  2. Stir to combine and refrigerate 1 hour (or up to overnight). To serve, add lemon-lime soda and ice.

Spring Treats: Watermelon Jell-O Petites

Yield: Makes 20 fruit slices

Ingredients

  • 1 cup boiling water
  • 1 (3-ounce) pkg. strawberry-flavored gelatin
  • 1 cup chopped fresh OR frozen* strawberries (*thawed )
  • 1/2 cup cold water
  • 5 limes, halved, pulp scooped out & discarded, AND rind halves reserved
  • 1 teaspoon black sesame seeds, poppy seeds, or basil seeds

Directions

  1. Slice the fruit cleanly in half lengthwise (through the axis).
  2. Carefully remove the pulp while keeping the half rind fully intact.
  3. Ensure that the rinds are dry (you can use paper towels to blot them).
  4. Set each half rind upright in a muffin pan so you can fill it with Jello.
  5. Mix the water with the gelatin (just like you would to make jigglers).
  6. You’ll want the Jell-O a little firmer than the normal recipe as you have to slice it in half again.
  7. Make sure that the gelatin is well dissolved, and then pour into the fruit before it begins to set.
  8. Fill up as high as you can; the Jell-O will shrink a bit when cooling.
  9. Carefully transfer to the fridge and let set for about three hours, per box directions.
  10. When the Jello is set, place the fruit open-side down on a cutting board, hold it’s shape with one hand and carefully slice in half lengthwise again to form quarters.
  11. Be careful not to smash the fruit as you’ll want to keep the Jello intact (you may use a serrated knife).

Healthy Bites: Chickpea & Tomato Salad

What’s a healthy lifestyle without fueling ourselves with some healthy eating? This yummy little recipe by Greenlitebites.com is a favorite of mine because it doesn’t require a lot of preparation and is easy to make!

INGREDIENTS:

  • 1 can chickpeas, drained and rinsed
  • About 1 pint grape tomatoes, halved
  • 25 large basil leaves, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp apple cider vinegar
  • 2 tsp olive oil
  • 1/2 tbsp honey (10g)
  • Pinch of sea salt

Toss all ingredients together and chill for at least 20 minutes, allowing all the flavors to merge and ENJOY!
